Julian et Emilie ont ouvert Bistro Japon à Aix en Provence. Avant cela, ils ont travaillé chacun de leur côté dans les métiers de bouche, de chef de cuisine à torréfactrice de café en passant par caviste de bières artisanales. Tous les deux passionnés de nourriture japonaise, ils ont pu goûter une grande variété de ramen, notamment à Paris et à Tokyo, où Émile a vécu 1 an. Quand l'occasion d'avoir un local dans le centre ville d'Aix-en-Provence s'est présentée, ils ont fait le choix du ramen comme élément central de leur projet. Toute la carte est faite maison, les bouillons cuisent entre 30 et 48h, et les nouilles seront bientôt réalisées sur place ! Ils ne sont que tous les deux, Julian en cuisine et Emilie au service, et ils donnent leur maximum pour vous proposer ce qu'ils aiment et savent faire.
